Dinner Is Served!
I didn’t intend for my blog to be just about food, but if you know me well enough, you know that it probably will be.
So my daughter Emma has a small-group science project to do. Wow they cook in science class now? Not exactly, the project is about cooking a meal and then calculating the nutritional value of the meal. My husband was nervous when I told them we were eating Emma’s science project for dinner!! Anyway, they did a fabulous job, and I thought it looked absolutely beautiful, so I had to take a picture. I also wanted to share the recipe, because it was absolutely the BEST Fettuccine Alfredo I have ever tasted, and I am NOT just saying that because my daughter cooked it. I make Fettuccine Alfredo from scratch, and this recipe will beat mine any day!
Before I post the recipe, I do need to tell you that they also had to do the grocery shopping for this project, and I couldn’t resist telling you how hilarious it was to grocery shop with two teenage boys that were not my own and my daughter. First off, bless MY two lovely sons, because when I took them grocery shopping with me they never snickered at the EXTRA VIRGIN olive oil, and they did not start all their sentences with “Dude!”
They each had their cellphones with them, and because they talk and text constantly, they found out that many of their friends were also grocery shopping with their moms after school. By the time we were done I had a gaggle of teenagers following me to the check-out. Yes, I got looks – mostly out of pity and confusion.
Okay, so I was the cool mom, and I let them video tape themselves racing to the car on the shopping carts.
The funniest part was as we were loading the groceries into the car. Two cars down there was a young lady with an adorable little baby girl in the baby seat of her cart. One of the boys notes (LOUDLY) “She just put her carton of cigerettes in her baby’s lap!! That’s so irresponsible!” Of course we all look over, and to make it even worse, she’s letting the baby play with an empty plastic bag – which the baby is waving above her head! The same boy (again LOUDLY) says: “That’s so stupid. Why doesn’t she just give her a pocket knife and a lighter so she can get into the cigarettes too!!”
Needless to say, the boys were very sweet and very helpful, (even though Emma did most of the cooking) and dinner was excellent!!
Chicken Fettuccine Alfredo
1/4 cup butter
1/4 cup olive oil
1 lb. boneless, skinless chicken breasts, cut into 3/4″ cubes (we used a 22 oz. pkg. of Tyson “Grilled and Ready” Fully Cooked Chicken Breast Strips to save time)
1/2 cup chopped green onions, with tops
2 cloves garlic, minced
1 cup whipping cream
1 pkg. Knorr’s “Alfredo Sauce”
12 oz. fresh mushrooms, thinly sliced
15 oz. can diced tomatoes, drained
12 tsp. salt
1/2 tsp. freshly ground pepper
1/4 cup chopped fresh parsley
2 tbsp. dried basil
1 lb. hot, cooked fettuccine noodles
1/2 cup freshly grated Parmesan cheese
Heat butter and olive oil in large skillet over medium heat. Add chicken, green onion, garlic; saute until chicken is lightly browned. Stir in cream, sauce mix, mushrooms, tomatoes, salt and pepper. Bring to a boil over high heat. Reduce heat to medium and simmer 3-5 minutes or until sauce is slightly thickened. Stir in parsley and basil. Remove from heat. Toss pasta with sauce, sprinkle with Parmesan cheese. Serves 6-8.
